Vadapav a street food in Mumbai. It is also named as Wada-Pav, Batata Wada-Pav, Bombay Burger, and many more. A vegetarian street food famous all over Maharashtra consist of a bread bun (Pav) and a deep fried potato patty placed inside that pav.

The quantity of ingredients used for vadapad is for 8. So, adjust the quantity accordingly…
- Potatoes (boiled & peeled) – 6
- Oil – 1 tbsp + for deep fry
- Asafoetida (hing) – a pinch
- Turmeric powder – 1/4 tsp
- Green chili-garlic paste – 1 tbsp
- Salt – to taste
- Coriander leaves (chopped) – 1/4 cup
- Lemon juice – 1 tbsp
- Garlic chopped – 2 pieces
- Loaves of bread (pav) – 8 small
- Coarse gram flour (besan) – 1.25 cups
- Soda Bi-carbonated – a small pinch
You can get all the ingredients in a grocery store and pav (loaves of bread) in bakery.
Steps to make Vadapav
To make batter place the gram flour in a bowl add salt, red chili powder, turmeric powder, soda bi-carbonated and mix them well. Add sufficient water and whip to a smooth and thick batter. Set aside for at-least 15 minutes.
Heat 1 tbsp oil in a pan. Add asafoetida (hing), turmeric powder, green chili-garlic paste and mix. Mash boiled and peeled potatoes and mix the potatoes into the mixture of asafoetida, turmeric powder, green chili-garlic paste and set the mixture aside to cool.Add coriander leaves, lemon juice and mix mashing the potatoes some more.
Divide the mixture into eight equal portions and shape them into balls.
Heat sufficient oil in a frying pan. Dip the potato balls in the batter made by the gram flour and deep fry the mixture of batter and potato balls in frying pan till it gets golden and crisp on the outside. Your Vada is ready.
Remove the vada in a absorbent paper and drain.
Slit each pav (loave of bread), spread some garlic chutney on pav, place a vada between and press lightly.
Your Vadapav is ready. Serve vadapav immediately with green chutney, red sauce and a fried green chili.
