The English name is an anglicisation of Urdu قورمہ‬, more accurately transliterated qormā, and derived from a Turkic root. The word korma is derived from Urdu qormā, ḳormā or ḳormah, meaning “braise”, and refers to the cooking technique used in the dish.

The quantity of ingredients used for Chicken Korma is for 2. So, adjust the quantity accordingly…

  • Onions – 3 large (diced)
  • Tomato – 2 (puree)
  • Cinnamon stick – 3
  • Green cardamom – 4
  • Cumin seeds – 2 tsp
  • Mace / Javitri – 2 springs
  • Black pepper – 3
  • Black peppercorn – 7
  • Bayleaf – 2
  • Cloves – 3
  • Red chili powder – 2 tsp
  • Coriander powder – 3 tsp
  • Turmeric powder – 1 tsp
  • Ginger Garlic paste – 2 tsp
  • Oil – 4 tbsp
  • Thick curd – 1/2 cup
  • Ghee – 2 tsp
  • Chicken – 250 gram
  • Kewra water – 1/2 tsp
  • Garam masala – 1 tsp

Steps to make Chicken Korma

In a sauce pan pour 4 tbsp oil, add the diced onions and stir-fry it till it become nice brown in color. Keep the flames medium while frying the onions. Remove onions in a paper towel leaving 1.5th of onion in that pan.

Add ginger-garlic paste in that pan mix for 2 minutes. Add cinnamon stick, green cardamom, cumin seeds, mace/javitri, black pepper, black peppercorn, bay-leaf, cloves and give it a mix.

Pour tomato puree, cook for 2-3 minutes. Add red chili powder, coriander powder, turmeric powder as given above, salt to taste and mix it very well. Into it add chicken pieces and mix the curry along with chicken. Cover the pan with a lid.

Make paste of curd and the remaining onions and add it in the pan. Stir it for 4-5 minutes, cover  it with a lid and cook 20-25 minutes on low flame. Add kewra water,  garam masala and again cook it for 4-5 minutes.

Your Chicken Korma is ready.
